Chunky Nut Breakfast Bites

DIRECTIONS

  • Preheat the oven to 350°F, (180°C). Put 12 paper muffin cases into muffin tins.
  • Melt the butter in a large saucepan over low heat, taking care that it doesn’t get too hot. Stir in the sugar.
  • Remove from the heat and stir in the apple, apricots and sultanas/raisins, oatmeal and Jordans Cereal. Add the beaten egg and stir well. Spoon into the muffin tray.
  • Bake for 10-12 minutes, until set and light golden brown. Leave to cool in the tin….if you can!

RECIPE TIPS:
If you have any left (unlikely) store in an airtight tin and polish them off within 1 week.

These delectable breakfast bites combine Jordans Cereal and wholesome oatmeal to make the best breakfast bite you’ve ever had….rather like a flapjack crispy cluster….did we just re-invent the wheel?

150 g (6 oz) dark chocolate preferably 70%

2/3 cup dark brown sugar
1 tsp vanilla extract
1/3 cup all-purpose flour
1 tsp baking powder
½ cup dried cherries (optional)
1 ½ cups Jordans Cereal, break up the clusters
