Jordans Raspberry Cranachan

Cranachan is a traditional Scottish dessert – our version uses Jordans Cereal, cream, fresh raspberries and a hint of whisky (or your choice of liquor). What a combination! – Perfect for a quick pudding with a twist!

Ingredients

  • 1 ½ cups Jordans Cereal
  • 2 cups raspberries (thawed if frozen)
  • 1 ¼ cup fresh whip cream, whipped
  • 2 tbsp Whisky (optional, can use alternates such as Grand Marnier)
  • Mint leaves to decorate

Directions

  • Lightly crush the raspberries with a fork. Reserve half of them, and then share the rest between 4 attractive serving glasses.
  • Whip the cream in a large chilled bowl until it holds its shape, then fold in the whisky (if using) and remaining raspberries. Add the Jordans Cereal and fold in gently.
  • Spoon into the glasses and chill until ready to serve, then decorate with the mint leaves.
Cook's Tips: Don't fancy whip cream? You can also make this recipe with a 500g of low fat Greek-style yogurt instead. Not a whisky fan either? No problem. Just leave that out too. Cream will whip more successfully if you use a chilled whisk/beaters and a chilled metal bowl before you start - just pop them into the fridge for 20 minutes, or into the freezer for 5 minutes. This is really helpful if the weather (or your kitchen) is warm.
